  • 1 cup pitted dates, chopped

  • For the Glaze
  • 1 cup powdered sugar

  • 2 tablespoons freshly squeezed orange juice

  • 1/2 teaspoon ground cardamom

Directions

  • For the Cake
  • Preheat the oven to 350°F (175°C). Grease a 9-inch (23cm) cake pan with vegan butter or cooking spray.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cardamom.
  • In a large bowl, cream together the vegan butter and coconut sugar until light and fluffy.
  • Add the flax eggs, freshly squeezed orange juice, and orange zest to the wet ingredients and mix until combined.
  • Add the dry ingredients to the wet ingredients in three parts, alternating with the unsweetened almond milk, and mix until just combined.
  • Fold in the chopped dates.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 40-45 minutes or until a toothpick inserted in the center of the cake comes out clean.
